- 1 tablespoon sesame oil
- 1 tablespoon mustard seeds
- 4 cloves of finely chopped garlic (optional)
- 10 finely chopped onions
- 1 sprig roughly torn curry leaves
- 4 finely chopped tomatoes
- 1 tablespoon sambar powder
- ½ tablespoon cardamom powder
- Salt (according to taste)
- Chopped mint leaves (1 bunch)
- 1 cup rice
- 1 ½ cups of water (depending on the rice quality)
- 1 tablespoon butter
Step 1:- Add sesame oil to the sauté pan of your electric pressure cooker and let the pressure cooker to be pre-heated.
Step 2:- Once the pan gets heated, add the ingredients. First of all, add mustard seeds. Once, they start crackling, add garlic and chopped onions. Then, add curry leaves. Sauté the onions until they become soft. You do not need to brown the onions. Once the onions begin to change color, add tomatoes. Mix and let cook for 3 to 4 minutes and then add Sambar powder. Also, add cardamom powder, salt to taste, and mint leaves. Mix these well and wait for the aroma!
Step 3:- Now, when the spices have mixed up well, add rice and water accordingly. Make sure not to add too much of water because you have added tomatoes and they are themselves moist so adding more water than required can ruin the taste.
Step 4:- Cover the pressure cooker with the lid and set it to the rice mode. The timer will automatically start after a few minutes. Now, you just have to wait for the pressure release.
Step 5:- After the pressure has released completely, you can open the lid and stir the mixture well but not too hard to break the rice grains. Also, you can add some salt at this time if you feel like doing so. If not then, add butter to the dish and stir once or twice. Your Tomato rice is ready to be served. Happy eating!
